Our second release of the season from Mooleh Manay Estate is here. With ripe red fruit and a wine-like character, it’s perfect for autumn. For this lot, ripe cherries were sealed in custom-built tanks and prepared for carbonic maceration, a process also used in winemaking. Fermentation in an oxygen-free environment brought out the bean’s sweet-tart spirit. Roasted to a light profile, it has a floral, wine-like aroma that leads into notes of plum, wine, and red cherry. Silky and juicy on the palate, the cup has a pleasant sweetness and lively acidity. It ends on a zesty note reminiscent of orange peel. Our roasters recommend brewing it black with a V60, or an AeroPress, or enjoying it as a cold brew.
